Cooking for one on a budget can be hard sometimes but i came up with something from scratch which is ridiculusly good! i wish i had my camera so i could take a photo of it its that good.
Chicken and Corn Soup :)
Ingredients:
Stock:
2 Chicken Drumsticks ($3 for 3 at safers!)
1 onion sliced in half w/ skin
2 whole garlic cloves w/ skin
salt
pepper
Soup:
Stock
kernels from 1 fresh sweet corn
small garlic clove finely chopped
1/2 onion finely chopped
spaghettini pasta broken into 3cm pieces
dried oregano
Directions:
1. in a pot boil 4 cups of water and throw in the ingredients for the stock, simmer for 15 minutes and take out the onion and garlic and then simmer for another 20 minutes until chicken is tender.
2. put the stock aside and take out the chicken.
3. take the chicken off the bone and cut into bite size pieces.
4. in seperate pot, combine 1 cup chicken stock and 1 cup of water, add enough corn kernels and chicken pieces for one person. simmer for 3-4 minutes and then add spaghettini pieces, simmer for another 2 minutes, add a little dried oregano and then its done!! but you might need to add some salt and pepper in the end. maybe.
the left over stock can be stored in the fridge and the chicken pieces and uncooked corn can be put in the fridge too. it makes it an easy option for a quick lunch cuz all u have to do is put it together!
i guess you could make it with stock from the supermarket but i like to make everything from scratch :)

i totaled the cost and it came up to about 3 dollars a meal since it makes about 3 meals, maybe 4! you cant really get cheaper than that for a pretty healthy meal! and its pretty filling aswell!
